My First Time Camping

Fruitland Park, Florida- It was the first time camping for me and my daughter, not Yamil, he is the camping pro. We had so much fun! We went to Fruitland Park in Florida, a  small town of about 4,000 people on US-441/US-27 north of  Leesburg . We found this amazing park called Lake Griffin State Park where they have campsites, hiking trails and water activities. They also have one of the largest live oak trees in the state. We set our tent and campsite to our liking, we wanted to make it magical for our three year old (at that time). We set our dining area using a fire bowl to heat up food and make our coffee, of course, we also hung some string lights, we put inside the tent an air mattress with lots of pillows and comfy blankets. Quick and Healthy Breakfast

For those days you are short of time but you still care about what you will have to start your day with, that meal of the day that (for me, at least) set your mood. That meal of the day they claim is the most important one out of all three, Breakfast! I have one of the quickest yet healthy and, like my four year old daughter says, yummylicious breakfast. A delicious Fruit Bowl- and here is what you'll need. Ingredients: 1/2 Apple 1/2 cup Papaya 1/2 cup Strawberries *any other fruit you would like to add Coconut Whipped Cream (I love using  So Delicious Coco Whip  Brand) 1/2 cup Shredded  Coconut Quick Process: Cut all fruits into cubes  Toss them in a bowl Add in the Whipped Cream  Garnish with Shredded Coconut

Five Ingredients Smoothie- The Hidden Garden Smoothie

Not sure why my husband and I called this smoothie the Hidden Garden Smoothie but it does sound good. Here is what you will need for this yummy and easy to-go smoothie.  Ingredients : 1 Banana  2 Kale Leaves  1 Cup Frozen Pineapple Chunks  1 Cup Orange Juice 1 Cup Water  Process :  Blend all together and voilà! How was Christmas Eve This Year?

Covid19 has marked our lives this year 2020. These past holidays, we have all been at home with limited amount of people and six feet apart from each other while in the same living room. This past Thursday 24th, Yamil and I decided to go big even if it was only the three of us, especially now that we recently moved to Seattle and we are  3,711 miles from our family in Puerto Rico. That evening we had a feast! We set our dining table with food served in every corner. We had Pumpkin stuffed ravioli, with roasted chicken, kale and cheese salad, and potato salad, yum! We even lit some candles, which later on I learned  (out of the subject)  that t he  candle  symbolizes the  holy illumination of the spirit of truth, so perfect scenario for Christmas. Puerto Rican Coquito (Traditional Christmas Drink)

During Christmas time, since I can remember from childhood, there is always Coquito at home. Keep in mind Christmas Season in Puerto Rico pretty much is from November 1st to January 14th ish. Yeah! the longest Christmas ever, therefore lots of Coquitos to enjoy and celebrate with! And so, one of the reasons this is my favorite time of the year is... yup you guessed it, COQUITO! I will list here all ingredients to this yummy drink for you to enjoy with others while the season last.   Ingredients:       1 (12 oz) can evaporated milk 1 (14 oz) can sweetened condensed milk 1 (13.5-ounce) can of coconut milk 2 cups (1 15 oz can) cream of coconut (like Coco Lopez) 1/8 tsp nutmeg 1 tablespoon vainilla essence   1 1/2 cup white Don Q rum cinnamon sticks for garnish Process:  1. Road Trip from Florida to Washington State

My husband and I are pretty adventurous and we dare to do things that not everyone does. Like this road trip, but this wasn't any usual road trip, this was more of exploring each state for a quick moment to see if we would fall in love with any specific place to stay for a while. The day was here, November 1st,  or 11.1 (repetitive numbers and universe manifestation will be discussed later on). We had our Kia Soul full of bags, toys, and kitchen essentials, like my beloved coffee machine. We started our trip at 5:00am(ET) with a half asleep 4 years old, and another half asleep 33 years old (me). Our first stop to rest was in Pensacola, FL. This is when we realized our clocks went back one hour, we were a little lost about that, ha! We headed out next morning, and next rest stop was Mississippi, then we ended up at Louisiana afterwards. Golden Gardens Park & Shilshole Bay

   If you are thinking where in the city of Seattle you can have both the beach and mountains, Golden Gardens Park will be one of the choices. This breathtaking place has everything you need to spend your day by listening to the waves while watching the  Olympic  Mountains across the sea. You see so many activities going on, from Playgrounds, Volleyball Court, Trails, Picnic Areas, a Bathhouse, and they have Restrooms and FREE Parking.   Golden Gardens Park- Pond   The moment we got to this beautiful park, we could see people relaxing in every way possible.  My four-year-old daughter, after playing with the sand, started skipping rocks right before going through one of the walking paths and finding a pond with Turtles and Ducks.
